Recipe/Meal Ideas

Okay everyone, so here's one part of my dilemma. Just coming up with what to eat. I get home from work and I'm tired and hungry and just want to eat dinner. Add to that, it's not so much fun to fix meals for just yourself. So I usually end up fixing something that's quick. Not necessarily bad, but usually a lot of carbohydrates. I am doing better at adding more fruits and vegetables to my meals. But I'm really wanting to know if anyone has somewhat quick meal ideas that are healthy and not meant to feed a whole family. So if you have any ideas, let me know!

Just to clarify: some leftovers are okay. Then that makes an easy lunch for work the next day. But if I have leftovers for too long, I don't eat them and they go to waste.

So I dont know what kind of relationship you have with your roomates but maybe have you each pick a day to cook. And then you get a break from cooking and eating out. Also you don't have to cut down drastically on a recipe to make it easy for a portion. You can then eat all the leftovers together. If they aren't into that get some people involved in the neighborhood.

I wish I had some amazing advice for you, but I struggle with the same thing! Jeanette did show me this book that has recipes in and it explains how you can freeze and store it so you can just have a meal pre-made and just pop it out of the freezer and cook it. The book is called "Girlfriends on the Go" and it has some good recipes.

Other than that, my advice is to move down to Cedar City and we can take turns cooking meals for each other! I think I like that idea best. I hate leftovers!
